The manual was prepared in accordance with the requirements of the State Educational Standard of Higher Professional Education for the training of an engineer in the specialties 260301.65 - "Technology of meat and meat products", 260602.65 - "Food engineering of small enterprises" in the direction of preparation 260100.62 - "Technology of food products", with the requirements of the Federal State Educational Standard of Higher Professional Education in the direction of preparation 260200.62 - "Food products of animal origin". The basics of sanitation and hygiene of the industrial processing of animal raw materials at conveyor and non-conveyor enterprises, as well as the examination of raw materials in farm conditions and markets are outlined.
