What do we know about medieval cuisine? Fantasy paints vivid pictures: whole roasted carcasses of wild boars and deer are served in castles, elegant lords and ladies sit in Gothic halls, and wine as red as blood is spilled from their goblets onto the tablecloth. On the contrary, succumbing to the influence of stereotypes and costumed historical dramas, we often imagine the life of ordinary people as a series of very sad scenes. Poor peasants chew dry flatbreads or moldy bread, beggars crowd around the church, begging for at least a crust from the fat prelate, and miserable scruffy people in the castle kitchen turn a spit with deer, almost dying of hunger... But what was the culture of cooking and eating food in the Middle Ages? centuries really?
