Family traditions in Yasnaya Polyana were protected by Sofya Andreevna Tolstaya. Her “Cookbook” is proof of this. The names of the dishes sound like this: apple kvass of Maria Nikolaevna, L.N. Tolstoy’s younger sister; lemon kvass from Marusya Maklakova, a close friend of the Tolstoy family; apple marshmallow of Maria Petrovna Fet and, of course, Ankovsky pie - family doctor Bersov Nikolai Bogdanovich Anke. Tolstaya collected recipes for 162 dishes that the entire large family ate. Two people wrote down the culinary recipes - Sofya Andreevna herself and her younger brother Stepan Andreevich Bers.
